Advent Day 3

Today was a pretty low key day. This morning Bill did not have a baby to see or an early morning meeting so he offered to take Mason to school.  That meant I was able to attend a 7 am meeting. Throughout the day, things were pretty normal for a Thursday.  After school Mason went to Killer to skateboard.  I dropped him off and took full advantage of proximity and curbside option to pick up orders from Lowe’s, Kohl’s and Target.  This is one of my favorite silver linings of Covid-19. It’s efficiency at its best and economically sound to boot.  I still had time to meet Walker to pick up new glasses at Costco.

Tonight’s dinner was simply roasted veggies, and easy meal to put together given the comings and goings around the dinner hour.  Our recent Misfits shipments have included parsnips, celeriac, turnip, beets and butternut squash. I wanted to see how these root veggies and squash would marry so I tossed them with a little EVOO, salt and pepper and popped them in the oven. The dish was hearty and healthy.  I popped the leftovers in a freezer bag which I’ll add to a soup sometime soon.

I had company while I prepped the dinner tonight.  Since I only traded messages with my Dad on his birthday, we carved out some time and we had a nice long conversation.  With the time change and our schedules, it’s a little harder to make phone contact but it would behoove me to make more of an effort.  My heart was quite happy for making that connection.

Today’s knitting progress was mostly on my Advent project.  I added the second color and moved onto the third.  I was initially stumped on how to turn the corner for this section but I finally figured it out.  I had to turn the knitting 90 degrees and add the color along the edge of the first two sections. Tomorrow I get to see how the fourth color is incorporated.  Stay tuned!
