I started making my own granola a number of years ago after watching Barefoot Contessa make a batch. I refined her recipe for my own taste. I now make it from memory but I thought I ought to post the recipe.
6 cups old fashioned oats
1 cup almonds (slivered or sliced)
1 cup unsweetened coconut*
3/4 cup vegetable oil
1/2 cup apple juice concentrate
Preheat oven to 325. Mix all the ingredients together in a large bowl. Once mixed, pour into a parchment lined pan. I use a half-sheet cake pan (12″ x 18″). Bake for 45 minutes or until golden. Cool in pan before storing in an airtight container.
*Unsweetened coconut is flaked coconut that does not have any added sugar. It is readily available at health food stores. I have never made it with sweetened coconut but I bet it would work, just yielding a slightly sweeter granola.

Love it. Have been having it for breakfast almost daily for a while now.
As for stirring it while it cooks, I’ve found that that spaghetti serving spoon with the fingers sticking out works really well.
PS—it makes the kitchen smell like apple pie.
ooh! I will give it a try. What do you mean by unsweetened coconut? Coconut milk? coconut oil?
I love your recipe and eat it every morning. I have actually convinced Lucy that granola and vanilla yogurt is a treat… she calls it the crunchy ice cream.
