Today was yet another day of virtual learning. The kids have now been out of their regular school routines for a full week. I should be grateful, and I am, that this is temporary and things will go back to the new “normal” when the winter weather passes.
The snow left a beautiful blanket outside. Before Bill left for work today, he filled up the bird feeders and tossed a lot of seed on the patio. It has delighted me to no end to see the birds belly bounce on the snow that is deeper than their little legs.
While the boys worked, I chipped away at admin tasks and did laundry. When the request for lunch came, I whipped up this tasty burrito with one of the mega sized tortillas from LA. I sautéed leftover Italian Salad—dressing and all—with a few eggs and a little cheese. The aroma was captivating and the recipient had no problem polishing it off.
This evening we were all around the table again, tonight for a vegetable stroganoff with pasta. I thought it would work well to use some veggies that we had from Misfits in a stroganoff base using this recipe as a base. I was right! Everyone loved it.
