Today’s breakfast was prepared in the Dutch oven lined with parchment and baked in our kitchen oven.
It contains sausage, green onions, mushrooms, tomatoes, mozzarella cheese, pancake mix, eggs, milk, oregano, salt and pepper. It was so delicious that I had a hard time sticking to a single serving. There was enough to feed a small army. Even after eating it for several days, there was still quite a bit remaining. To make the most of the leftovers, I portioned out the mixture in flour tortillas, wrapped up the breakfast burritos and froze them. Now Walker can continue to enjoy this meal over the next few weeks. Yum!

I have been contemplating the purchase of a Dutch oven for awhile. Some people talk about ceramic, but I like the cast iron I think. Although yiur parchment paper leads me to believe it is hard to clean,,,any thoughts?
Sounds delish! I am guessing I can make that in a baking dish? Going to try!
