Today I really got to wake up and smell the coffee! I walked outside for an hour and even though I wanted to quit, I persevered.
Overall, it was a mellow day in these parts.
I knit with my local friends for the first time since the quarantine started. Using Google Duo, we were able to see each other and catch up on knitting projects.
This afternoon I phoned Dell to get Mason’s microphone up and running on his laptop. Bill did a ton of troubleshooting to get it to work but was unable to resolve it. He suspects there is an update that needs to be installed. With Mason’s classes being online via Zoom, that feature is important.
Tonight for dinner I prepared beet greens and beet stalks. These were from our Misfits order and I didn’t want to waste them. They were delicious. I just chopped the stalks into small pieces and sautéed them with garlic and olive oil. After about ten minutes, I added the greens and let them wilt. I served them with spaghetti squash and whole wheat orzo topped with a parmesan kale pesto sauce.
