Mason is not the only one cooking lately. When I realized that we were limited on trip out of the house for groceries, I became even more determined to use what we have on had. A few days ago, I turned an unopened gallon of milk that was about to expire into paneer. Paneer is a type of cheese commonly used in Indian food.
I had no idea how easy it was to make this cheese until I saw a video on YouTube. The recipe involves only milk, lemon juice and time. The milk is heated, lemon juice is added and then it is strained and pressed in cheesecloth.
The gallon of milk yielded quite a large quantity of paneer. I didn’t want it to spoil either so I whipped up paneer quesadillas. I seasoned the paneer with spices and then cooked them up in some big tortillas. They were a hit with the boys.
