Chef Bill and Other News

It’s all about the small details (like that little cozy I’m knitting) that make up a great day lately.  Some of today’s highlights included good decaf coffee, a Zoom meeting with friends, texts with loved ones and friends, routines, and an evening walk with Bill.

Bill took charge in the kitchen tonight. His next recipe challenge was to recreate Sam the Cooking Guy’s Tuna Melt. Of course, a great sandwich starts with great ingredients.

He and I went off to Aihua International Market and picked up Japanese mayonnaiseSam is in love with this stuff. His recipe also calls for tuna steaks which we purchased from a fish monger at another market.  Prior to watching this video, I had never considered how canned tuna was prepared for canning. I’m pretty sure not all canned tuna is sushi grade steaks but after eating Bill’s sandwich creation, I can really appreciate the quality.

Bill followed Sam’s directions for cooking the tuna, and then he shredded it and mixed in fresh dill, green onions, parsley, Japanese mayo, and salt and pepper. He fried bacon for Mason’s sandwich too.

Then he constructed the sandwich and grilled it. He made three with gooey melted jack cheese, sliced tomato and avocado

and for Mason, he added the bacon.

We tossed a few plantain chips on the plate and called it a fantastic dinner.  Sam did not steer us wrong.  The depth of flavor of this sandwich was fantastic.

In other news, the mail included a pleasant surprise.

I opened up a Boy Scout appeal letter from Buffalo Trace Council and started reading their promotional brochure.

My eyes landed on a very familiar pair of scouts.

Mason has done it again! He and Tristan were photographed at a council camporee or event. (Mason was also front and center on one of Camp Ondessonk’s registration form.)

And that pretty much wraps up our Saturday.
