Good morning from Grogu! Baby Yoda is doing well and thriving at Bill’s office.

I hit the ground running today.  Most Mondays are red beans and rice days where I’m home all day working on laundry, housekeeping and chores but today I had a 7:30 am appointment. Since I was out already, I piggybacked some other errands and went to the cleaners, the grocery store, the food pantry and then home.

This morning Monique and I had a phone meeting. We talked about Christmas past—memories from our childhood, gift giving, tree decorations and traditions.  Let’s not forget that Dad gave each of us an allowance to buy gifts for the others and every year we had a five pound box of See’s candy.  We chatted and chatted and at the end my heart was happy and I had logged 3.65 miles.

I prepared a new recipe for the family and it was a success! Ok, it was not a new recipe by any means, but it was my first attempt at introducing it to the entire family. I made Tuna Noodle Casserole using the recipe from the 1973 edition of Joy of Cooking. In essence, I cooked a bag of egg noodles, drained them and to that I added two large cans of drained tuna, two cans of healthy cream of mushroom soup, about a cup of cheddar cheese and some Dijon mustard, Worcestershire sauce and salt and pepper.  I put it in a buttered 9” x 13” pan and to one side I added green peas.  Then I topped it with a bag of crunch fried onions and baked it for 30 minutes on 350 degrees.

On a happy note, I sent a care package to my friend, Sandy, who lives in Brazil, Indiana.  I gave her a book, a batch of my homemade granola and a knitted surprise. She collects teddy bears and thus I made her a mother bear in her favorite color, blue. Sweet Frankie has been helping me customize my bears and told me I needed to make it have overalls.  I sewed on the face and my tag on the backside.

After Sandy received her gift, she told me that she had hoped, hoped, hoped I would make her a bear. I could hear the delight in her voice and her reaction really warmed my heart!

It was a wonderful Monday!
